Anyone that knows me well, knows that I love to cook, but baking has never really been my forte. However, there are a few items that I enjoy baking, and that get rave reviews from friends and family.
I love baking all kinds of muffins, banana bread, and also have a foolproof recipe for a delicious coffee cake. When we have overnight company, I try to have something homemade for our guests to enjoy. These muffins are always a big hit!
Right now the blueberries look so great and they are so sweet, that it just made sense to whip up a batch of these lemon and blueberry beauties.
The recipe is originally from Food Network, but I modified it a bit to suit our taste. I like a very lemony muffin, so I added some squeezed lemon juice in addition to the zest. Also, although I do not usually like anything too sweet, this recipe needed some additional sugar.
I think this will become one of your favs, and since it is so easy, you can make these all of the time.
Lemon Blueberry Muffins

Ingredients
- 2 1/2 cups unbleached all-purpose flour
- 1 cup sugar, plus more for sprinkling on top of muffins
- 1 tablespoon baking powder
- 1/8 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup whole milk
- 2 large eggs, at room temperature
- 1 tablespoon finely grated lemon zest
- Juice from 1/2 lemon
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups fresh blueberries, rinsed and dried
Directions
- Step 1
- Preheat oven to 425 degrees. Line either 6 large muffin or 12 regular size muffin tins with cupcake liners
- Step 2
- Whisk the flour, sugar, baking powder, and salt together in a medium bowl
- Step 3
- Melt the butter in a microwave safe dish or measuring cup
- Step 4
- Whisk eggs, milk, lemon zest, lemon juice and vanilla with butter
- Step 5
- Make a small well in the dry ingredients
- Step 6
- Pour wet ingredients in to the well and stir to mix (do not overmix – there will still be some lumps)
- Step 7
- Gently stir in the blueberries
- Step 8
- Divide the batter evenly into the muffin tin and sprinkle generously with sugar
- Step 9
- Put the muffins in the oven and immediately reduce the temperature to 375 degrees
- Step 10
- Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking
- Step 11
- Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean

- Cool muffins in the pan on a rack for a couple of minutes

- Turn the muffins out of the pan and cool on the rack
