We have quite an extensive collection of cookbooks including Ina Garten’s whole series. Her recipes are always foolproof. Of course, we modify each recipe to suit our taste, but basically you cannot miss with her meals.

We always enjoy roasted vegetables in the fall. This Mediterranean vegetable recipe is colorful and definitely “company worthy”. Serve this with grilled chicken, pork chops or tenderloin for a whole meal.
This risotto recipe is complements of my cousin Karen in the UK. She made this for us when we were there in June and I just HAD to have the recipe. You can add just about anything to make it special. We like mushrooms, peas, ham, bacon, proscuitto, parmesan — the options are endless! AND, there is no hovering over the stove stirring. Just add your stock and let it simmer. Now, how easy is that?
If you are looking for a perfect appetiser, you should whip up a bowl of Roasted Red Pepper and Artichoke Tapenade. We discovered this recipe while traveling to New Mexico. It was a big hit when we served this with a combination of crackers and sliced baguette. You can also opt to make crostini, spread some of the tapenade on on the crostini and add some shaved parmesan cheese on top. It looks pretty and tastes amazing!

It is officially “soup season”. This Sausage, Tomato and Zucchini Soup is another fav! It’s one meal in a pot and is so satisfying.
