Easy Peasy Is Always Best
Sometimes the simplest recipes are the most delicious.
Fresh Atlantic cod is such a mild and delicious fish. This preparation of a traditional recipe with a “twist” is a real winner. It is so easy that you will not believe that it could be so delicious.
This really is “restaurant worthy” and definitely an excellent choice if you are entertaining. It just takes a couple of minutes to prepare and 12 minutes in the oven.
The recipe here is for two servings, however, you can double or triple the recipe as needed.
And, the fish pairs really well with Ferrari-Carano Chardonnay. Cheers!
Restaurant Worthy Crusted Fish – Yum!
We like Old Bay Seasoning with fish and shrimp, however, you could definitely change up the spices and add something for more of a “Frenchie” flavor. Why not try adding Herbs de Provence or some fresh dill. We really love the Herbs de Provence from Williams Sonoma. It adds a nice depth of flavor and richness to the topping. Actually, Williams Sonoma has a great selection of specialty food items that we have tried and found all to be of excellent quality. Check them out.
Another option is to give this dish a “South of the Border” taste by adding some hot pepper flakes and serving with Black Bean and Corn Salsa. We have been making this salsa for many years and it never disappoints. It is fresh and tangy and a perfect side dish for the fish. The picture below is from a post back in 2019 which gives you an idea of how long we have been enjoying this recipe.

Black Bean And Corn Salsa

Ingredients
- 1 15 ounce can black beans, drained and rinsed
- 1 cup fresh or frozen corn
- 1 cup chopped red onion
- 1 medium red pepper, chopped
- 3 tablespoons white wine or white balsamic vinegar
- 3 tablespoons light tasting olive oil
- Juice from 1/2 lime
- Salt and pepper to taste
Directions
- Step 1
- Mix all of the ingredients together and let stand for at least 30 minutes prior to serving
- Step 2
- This is great with any grilled meats or fish
Anyway, we opted to serve this with fresh green beans and lemon parsley rice. Basically, the rice is cooked as usual with a little lemon zest and juice added. Add about a tablespoon of fresh parsley at the end of the cooking.
One Fish, Two Fish, Red Fish - Best Fish

Ingredients
- 1 pound fresh Atlantic cod (cut into serving pieces)
- 1/4 cup of good quality mayonnaise
- 1/4 cup grated gruyere cheese
- 2 tablespoons panko bread crumbs
- 1 tablespoon fresh, chopped parsley
- 1 teaspoon Old Bay Seasoning or your seasoning of choice
- Fresh ground pepper
Directions
- Step 1
- Preheat oven to 400 degrees
- Step 2
- Pat the fish dry
- Step 3
- Mix the mayo, cheese, spices until completely combined
- Step 4
- Spread the mixture over the fish to cover
- Step 5
- Sprinkle with bread crumbs and parsley
- Step 6
- Bake for 10 minutes at 400 degrees
- Step 7
- Finish under the broiler for an additional 2-3 minutes until the bread crumbs are browned and a nice crust forms
- Step 8
- Serve with a slice of lemon
