Spending Time Appreciating Nature
Lately we have been spending time appreciating where we live and what nature has given us here in the Lowcountry.
We live in a community surrounded by salt marshes and rivers. One of the things we love to do is head to our community dock overlooking the beautiful Colleton River.
The dock has a covered area with Adirondack chairs, ceiling fans and panoramic views of the river. It’s pretty hot here in the summer and this is the one place where you can enjoy a bit of a breeze.
During our last visit to the dock, we heard some unusual splashing and spotted some playful dolphins. We really enjoyed watching them frolicking around the dock area and need to be quicker with the camera next time to capture a photo.

This is the perfect place to sit, relax, and enjoy a cold beverage. We always bring books and magazines to read as we look out over this beautiful spot.
Dinner Time After A Relaxing Day
After a long day of relaxation, now we need to figure out what’s for dinner.
We had picked up some salmon filets and also had fresh artichokes in the fridge, so we made a super simple and delicious meal of grilled salmon and steamed artichokes. A simple sauce combining mayonnaise, lemon juice, chopped capers and ground pepper makes a perfect dipping sauce for the artichokes.

It’s so great that we can finally enjoy salmon for dinner. The hubs likes most foods but never liked salmon. At a recent party our friends served grilled salmon and he loved it. I was shocked to see this on his plate as he raved about how delicious it was. I guess a person’s taste can change over the years and it’s good to add such a healthy item to our meal plan.
This is not really a recipe but just a simple grilled fish with a steamed artichoke. We drizzled olive oil on the salmon and used a spice rub that is specifically for fish dishes. We intend to get the spice that our friend used recently, as it was so flavorful. She recently shared that they used Borsari Original Seasoning from Trader Joes. Since we do not have a Trader Joes in our area, we plan to order this online.
We paired this meal with a Whitehaven Sauvignon Blanc and it was perfectly crisp with hints of citrus which enhanced the flavor of the salmon.
Now We Are Looking Forward To Fall And Some Cooler Weather
It’s hard to believe that summer is almost over. We are looking forward to some cooler weather and seasonal change. We never really saw much of a change in seasons while living in South Florida for so many years, so this is all so new to us.

Hi! Power outage up here for almost 6 days. We were thankful, we had our GENerac. I was so sick of people Whining! Would they rather be in Aghan. or Haiti now? I don’t think so. Most power was back yesterd. I don’t talk politics w/ANYONE, BUT the whining of the “Spoiled Entitled Americans, which I am one, admittedly……can drive u to your knees, real fast! Hope all is well.
