Warm Winter Weather In The Lowcountry
The weather has been beautiful here in the Lowcountry. Believe it or not, we had temperatures in the 70s today. Needless to say, this is definitely warm for the month of December – we are not complaining.
Typically, we make comfort foods, soups, and stews at this time of year when it is usually cooler. Today, we decided to make a simple dinner featuring spicy shrimp, a cool and crisp Jalapeño Lime Slaw and some yellow rice. It just sounded like the perfect meal on a warm evening. Perfect Dinner In A Hurry
If you are in a hurry, this is the perfect meal. We always have some wild caught, frozen, shelled and deveined shrimp in the freezer. We defrost the shrimp in cold water, pat dry and they are ready to prepare.
Of course, we always modify recipes to suit our taste and we like a nice “tang”, so we added a little more lime juice than the original recipe. The sauce is thick enough to coat the shrimp and the rice soaks up the rest.

Chili Lime Tequila Shrimp

Ingredients
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes (we used slightly less)
- 1/2 teaspoon chili powder (we used chipotle chili powder)
- 1/4 teaspoon ground cumin
- 1/4 teaspoon freshly ground pepper
- 1 teaspoon water
- 1 1/2 pounds large shrimp, peeled and deveined (about 20)
- 1 tablespoon light tasting olive oil
- 2 garlic cloves, finely minced
- 1/4 cup tequila (don't worry the alcohol will burn off)
- 2 - 3 tablespoons fresh chopped cilantro
- 3 tablespoons fresh lime juice (the original recipe called for 1 tablespoon)
Directions
- Step 1
- Mix the salt, red pepper flakes, chili powder, cumin and pepper in a small bowl
- Step 2
- Add the water and stir to form a paste
- Step 3
- Rub the shrimp with the paste until well coated and set aside
- Step 4
- Heat a large skillet over medium-high heat
- Step 5
- Add the oil and saute the shrimp for one minute per side
- Step 6
- Add the garlic to the pan and heat for one minute
- Step 7
- Pour the tequila in to the pan and scrape up the bits on the bottom (be careful, as this can flame up)
- Step 8
- Add the cilantro and lime
- Step 9
- Put shrimp back in the pan including any accumulated juices
- Step 10
- Cook until shrimp are opaque in the center (do not overcook)
- Step 11
- You will have a nice sauce to pour over the shrimp

- We served brown rice with saffron and sprinkled scallions over all
